Spicy Slow Cooker Tortilla Soup

Alright, the weather is all over the place right now, so here’s a recipe for tortilla soup that I altered from anunrefinedvegan.com, for those days when it decides to be winter…ish.

Ingredients

olive oil                               1 sweet onion                2 cloves garlic

28-oz. can diced tomatoes    3 tbsp. tomato paste         4 cups vegetable broth

a lime                                  1 tsp. cumin                      1/4 tsp. chile powder

pinch of dried oregano                                1 tiny can chipotles in adobo sauce

                  15 oz. can of each (frozen or dried works as well use about a cup)                    cannellini beans    corn        black beans

 corn tortilla chips             your favorite hot sauce 

               cilantro                               avocado                             red onion

This is a pretty simple recipe everything but the tortilla chips part of the cilantro , avocado red onion and lime, gets thrown into the crock pot for about 4 hours on high.

mince the garlic, chop the sweet onion and red onion

place everything into crock pot with about a tablespoon of oil

only add half of the red onion

add spices *not cilantro

add vegetable broth, and if you’re like me remove your chipotle peppers and mince then add again

rinse your beans and corn…*not pictured black beans

add to crock pot

cut your lime in half and squeeze in save the other half for later

Stir and add some chopped cilantro

let it cook up

get your garnish and tortilla chips ready

and wait impatiently for several hours

add crumbled chips into soup this thickens it quite a bit

you can always add water to dumb down the spice and make it more soup like

then pour a bowl and garnish

again make sure your spices are gluten free if you do have a gluten allergy

I served mine with sour cream if you’re vegan you could easily use a dairy free sub. Also, a crumbled queso fresco would be probably be a nice addition or a little crumbled tofu. You could add cooked chicken if you enjoy meat or add a seitan.
